Jonathan Mendez is a hospitality and operations expert and co-founder at Saloniki. He has built his career since his teenage years as a front-of-house industry professional. Jonathan started on the path to becoming a lawyer before realizing his true passion lies in hospitality. Over the years, Mendez joined Papachristos and his brother on their annual summer trips to visit their family in Thessaloniki, Greece. It was there that Mendez was struck by the delicious simplicity of the local cuisine and became inspired to make it accessible to American diners, planting the seed for what would become Saloniki. In 2012, Mendez used his free time planning the Greek fine-casual concept, watching his dream come to fruition over the next few years.
